Whether in the depths of a snowy winter or the peak of a summer heatwave, soup is an integral part of lunch in Slovakia. So, how hard could it be to put together a typical Slovak soup? To find out, Gavin Shoebridge asked his "Babka" (Grandma) to guide him through the creation of a typical lunchtime soup in her kitchen.

If you'd like to make this broccoli soup yourself, here are basic instructions.
Ingredients (makes enough for 4 people):
Chopped broccoli (half a head)
Chopped carrot (1 cup)
Chopped parsley (1 small bunch)
Chopped celery (half a cup)
Leek (1/4 of a cup)
Vegetable oil (1 Tablespoon)
Chicken stock cube (half)
Salt (1 pinch)
Peppercorns (3)
Dumplings:
Semolina (1/2 cup)
Egg (1)
Vegetable oil (1 Tablespoon)
Salt (1 pinch)
Broccoli aside, fry vegetables for 5 minutes first with oil in a large pot. Add approximately 1 litre of water. Add chicken stock, salt, peppercorns and bring to the boil for 15 minutes.
In the meantime, create the dumplings by mixing all dumpling ingredients together to form a firm paste. Into the boiling soup, add the broccoli, along with cut pieces of the dumpling mix. Add parsley and cook for 5 minutes, then serve before your main meal.
